Stuffed Cucumbers


  • 100 gr of European cucumbers
  • 40 g of roma tomato
  • 1 teaspoon of onion.
  • 2 tablespoons of corn.
  • 1 tablespoon of extra virgin olive oil.
  • Balsamic vinegar of Modena.
  • Salt.
  • Pepper.
  • Preparation
  • Rinse and peel the cucumber. Cut the cucumber into thin and long slices.
  • Wash the tomato and cut it into small pieces. The onion, cut in half, peel and chop into squares. In a heat-resistant glass tray add the already chopped vegetables except for the cucumber.
  • In the heat-resistant glass tray add a little salt, pepper, olive oil and some vinegar. We mix everything together.
  • Now we are going to start rolling the cucumber with the slices that we have chopped. We introduce the vegetables that we have in the heat-resistant glass tray.
  • To finish our dish, we decorate it with some tomato slices.
