- 2 Persian cucumbers, seeded and diced
- 4 medium diced tomatoes
- 1 medium red onion diced
- ¼ cup chopped fresh mint or parsley or 1 tablespoon dried mint or parsley, crumbled
- 2 tablespoons fat-free feta cheese, crumbled
- Juice of 2 fresh limes
- 1 tablespoon of extra-virgin olive oil
- 1/2 teaspoon of black pepper
- mix it up and serve
